Salmon Fish Cakes with Chives & Red Pepper

serves 1 - 3  time 30 - 60mins  



15 g butter
1 onion, finely chopped
400 g salmon, minced or chopped
red pepper finely chopped
50 g cream cheese, softened
100 g fresh breadcrumbs
2 tbsp chopped fresh chives
½ tsp paprika
1 tbsp garlic powder (optional)
Plain flour, for coating
Sunflower oil, for shallow frying

Cooking Method

1. Melt the butter and saute the onion and pepper for 3 to 5 minutes. Allow to cool then stir in the minced fish, cream cheese, breadcrumbs, chives, paprika and garlic. Mix together well.

2. Form the mixture into 4 patties, toss in a little flour to coat, and refigerate until firm.

3. Heat a little oil in a frying pan and cook the salmon cakes for about 8 to 10 minutes, turning once until golden and cooked through.
4. Place onto kitchen towel to soak up any excess oil. Serve immediately.
[TIP - can be served with potato or vegetable wedges, salad, creamy caper sauce and a slice of lemon.]
